Paella

Last night, decided to make some paella. This after a week of not being a vegetarian, is way too much meat.

Ingredients: 

2 Hot Italian sausages
1 Chicken breast
8 green lipped, frozen mussels
2 cloves of garlic
1 onion
1 Tbps tomato sauce
1 tsp dried thyme
pinch of saffron
salt and pepper to taste
4 cups of liquid.

Directions: 

If the meats you use are frozen ensure they are all defrosted.

Rince the rice under cold water a few times to remove starch and set aside.

In a large pot brown sausages first, then brown the chicken in the same pot. Do not need to cook all the way through because they will continue to cook in the rice.

Remove chicken and sausages from pot, and set a side on a paper towel to remove some of the grease.

Now to saute the onions, garlic and add the thyme to season the oil.

Once the onions, and garlic are sauted add the rice to the pan to cook the rice until it is a little translucent.

add the tomato sauce and 4 cups of liquid (I used a bit of vegetable stock and the rest water).

and the pinch of saffron at this time as well, I added the muscles at this time as well (not really sure when to add them so they dont over cook).

bring the pot to a boil and turn down to a simmer (i forgot to turn it down to a simmer) and cover.

cook the rice until it is your desired consistency/ texture and enjoy.
