Mac & Cheese

Today I made some Mac & Cheese.

I strayed away from the box stuff, because there was only 1 box left and I have to save that for my brother.

Directions: 

In one pot prepare noodles as directed on package.

As the noodles are cooking,
dice up an onion,
slice up deli slices (I used veggie cajun spicy chicken, i guess bacon would work too)
slice up some mushrooms
and mince some garlic

In a separate pot, heat up some oil and butter to crisp up the deli slices and sautee the onions. Add mushrooms and garlic towards the end of this step because they do not need to cook as long and may burn while onions and deli slices are sauting. Season this with salt and pepper.

Now time to make the roux. add a tablespoon of butter and a couple tablesppons of flour. cook the flour a bit to get rid of the chalky taste.
Now time to add the milk, slowly add the milk while stirring to avoid forming lumps in your sauce. Note that the sauce gets thicker when its heated so add milk a bit a time then allow the sauce to heat and thicken. keep adding milk until you get the desired consitency and amount.
I also added some hot chili oil to the sauce to make it a bit spicy. if you're using chili peppers or flakes I would add this when sauteeing the mushrooms/onions etc.

Grate a lot of cheese into the sauce to get a nice cheesy flavour.

Once the noodles are done place them into a oven proof baking dish and pour the sauce over the noodles and stir. I at this point i added a beaten egg (not sure if this did anything but I've seen people do this). Then I grated more cheese on top.

Place into a 375 degree oven for 20 mins or so.

Sorry this recipe isnt exact, but that's the way I cook.
