Falafel Burger

Decided to eat a little healthier last night.  Already had some tuna and a bit of left over steak during the day.  Was watching the food network and Bobby Flay made a roasted eggplant sandwich, didnt have any of that so went looking through the cupboards and found some chick peas. 

Either a chick pea salad with garden tomatoes or a falafel burger. I havent had falafel in a while and didn't feel like going to Tov Li. So I decided to make falafel burgers myself.

Ingredients: 

1 can of Chick Peas
2 tbsp Flour
a bunch Parsley roughly chopped
2 cloves Garlic roughly chopped
1/2 an Onion diced
some diced Zucchini
diced roasted Red Pepper
diced roasted Jalapeno pepper
diced Kalamata Olives
Salt & Pepper to taste

Directions: 

To Roast Peppers:
Pour olive oil, salt and pepper over Red and Jalapeno Peppers. roast in oven at 425 until skin becomes black. Once black, remove skin, seeds and dice

Falafels:
Throw first 4 ingredients into food processor, not sure what the consistency should be mine was too mushy.

Saute onions and zucchini seasoning as you go.

Put everything into mixing bowl and form into patties.  allow to sit in the fridge to firm up (30 mins?).

Fry patties in a pan in a little bit of olive oil browning on both sides.

 

Toppings:
Top with your favourite toppings/condiments.  I used some of the the roasted red peppers and some roasted zucchini (roasted eggplant would be good too).  I also used a spicy yogurt. Chili powder and some Sudden Death Sauce.

 

Suggestions:
I tried this recipe baked as well didnt turn out as good, takes a bit longer and out layer of burger dries out.
