Chimichurri Steaks
Had some steaks on the grill today, i think they were New York Strip, about an inch thick or so.
parsley,
garlic
chili flakes
salt
pepper
olive oil
lemon juice
2 New york strip steaks cut in half, about an inch or so thick.
basting liquid
3/4 cup warm water
1.5 tsp cayenne pepper
1 tsp salt
In a blender mix parsley, garlic, chili flakes, salt, pepper, olive oil and lemon juice. basically making a vinaigrette type consistency.
in a ziploc bag place the steaks and oil mixture and let sit for half an hour.
I did this while the steaks were coming to room temperature.
for the basting liquid and to make the steaks a little spicier, mix warm water, cayenne and salt together.
After 30 mins, place the steaks on a hot grill. Baste once in a while with the basting liquid (optional).
after 3-4 minutes turn the steaks 90 degrees (to get cross marks). after another 3-4 minutes flip over and repeat on the other side.
8-10 mins we had delecious medium-rare/ medium-well done steaks.
Let steaks sit for about 10 mins to let juices re-absorb into meat.
