Buffalo Tofu Bites

One of my brother's favourite ways to eat tofu.
1 Block of Extra Firm Tofu
2 Pats of butter (we used salted butter - usually use unsalted to control amount of salt)
cornstarch
Franks Red Hot Sauce
Blair's Sudden Death Hot Sauce (small amount compared to franks red hot sauce)
Honey
pinch of Salt - if used unsalted butter.
We usually freeze our tofu, this gives it a more chewier texture.
Defrost in microwave. cut into four equal sized slabs.

Wrap in paper towel can place another cutting board on top with some sort of heavy weight on it for about 30-60 mins. This removes the liquid in the tofu.
After the liquid has been squeezed out. Dice the tofu into bite size piece (3/4 - 1 inch cubes). Place into a container or bowl and cover with cornstarch.
Heat oil in frying pan and place tofu into it.
While tofu is frying, in a sauce pan combine hot sauces, salt, butter and honey.
Cook Until butter is melted, stir occasionally.
After a few minutes turn pieces of tofu over to fry opposite side. Let fry on this side for a bit. Ensure that all sides of the tofu have been fried before removing from pan.
Place tofu onto paper towel to remove excess oil.
Then place tofu into a container with a lid on it. Pour sauce over tofu. Cover and shake to coat all pieces with sauce.

Note: you can adjust the level of heat but varying the amount of hot sauce you put in. Of course you can use your favourite brand of hot sauce. We just happen to have a very large bottle of Frank's Red Hot sauce so I used that. I used the Blair's Death Hot Sauce sparingly because that stuff is pretty hot (I usually just place the end of a knife in the bottle and what ever sticks to the knife i use).
