bacon wrapped poutine stuffed chicken

There were some chicken thighs in the fridge and decided to make this. Originally wanted to stuff with cheese and spinach, but didn't have any (found out later we did). top with cheese and gravy you can't go wrong.

Ingredients: 

French Fries (cooked)
Cheddar Cheese - cut into sticks
chicken thighs - boneless skinless (these weren't had to do that myself)
2 strips of bacon / chicken thigh - we used maple flavoured bacon
grated mozzarella cheese
gravy - we used can mushroom gravy

Directions: 

1. cook french fries as directed on package, let cool.

2. lay two strips of bacon on cutting board. top with chicken thigh,  then cheese and fries.

3. carefully roll into log trying to seal cheese and fries in chicken (not necessary but keeps more cheese within chicken)

4.  wrap air tight in tin foil, we will be poaching in water do not want water to go inside package.

5. place packages in fridge for 20-30 mins.

6. boil water.

7. Once water is boiling place packages in water and poach for 15 mins.

8. Preheat oven to 200C.

9.Take packages out of water and unwrap. place chicken on baking sheet and cook for another 20 mins or so until bacon is crispy.

10. Heat up gravy.

11.place chicken on plate, top with grated cheese and cover with warm gravy.

Enjoy.
